This low-intervention white Burgundy is a single-barrel expression of chardonnay from the premier cru slopes of Saint Aubin. Winemaker Jonathan Purcell leases the small zero-point-four hectare La Combe parcel, featuring twenty-five-year-old vines with a northeast exposure. The fruit is grown on heavy clay soils, foot-crushed, and direct-pressed straight into a single five-hundred-liter old oak barrel. It undergoes a spontaneous fermentation driven by native wild yeasts and matures for nine months without added sulfur.
It pours a bright straw-yellow color, opening with a refined nose of lime zest, fresh hazelnut, and flinty smokiness. On the palate, a taut and saline frame balances a subtle buttery texture with a vibrant, high-acid core. Clear flavors of green apple and citrus pith interweave nicely across the structured mid-palate. This mineral-driven energy drives a clean, persistent tension that shapes the center cleanly. It finishes dry and persistent, leaving a crisp, mouthwatering trace.
